I'm looking at restoring a 1931 Ford Model A, and I am searching for an online technical manual or something that gives me an idea of what I am getting into without having to invest too much into it right away. This would really depend on what body type you have ie tudor coupe etc, or if you are building a fibreglass body or restoring an original steel, if you have a rolling chassis, or are using the original, how much of the car is complete or what condition it is in etc etc. The 1928-1932 ford range are arguably the most popular pre '49 models ford released, and therefore parts are most easily available for them. It really depends on if you are going to to a complete vintage restoration (very hard to find original parts) or wish to create a street rod.
